Philippe Bruot, the passionate owner of the distillery, began exploring the secrets of distillation in his childhood. In 2016, he took on the challenge of becoming the first rum producer in New Caledonia, offering a range crafted from fresh, responsibly grown products. Since December 2020, the distillery has also produced the first Caledonian whisky, marking a significant step in its ongoing innovation.
Beyond its role as a distillery, the establishment aims to root its production in heritage development. Curious visitors are invited to discover the behind-the-scenes of production through a comprehensive tour. Steps such as crushing sugarcane, extraction, fermentation, distillation, storage, aging, and bottling the precious elixir are unveiled, providing an educational and immersive experience.
